Abstract: In order to improve the yield and quality of mungbean sprouts, enzyme diluted 200 times, 400 times, 600 times, 600 times solution of enzyme + 10 μmol/L of sodium selenite, 600 times solution of enzyme + zinc gluconate (Zn2+ 50 mg/L) were used to carry out mungbean germination test, respectively. The growth, yield and quality performance of moungbean sprouts were compared and analyzed with clear water as check treatment. The results showed that enzyme and enzyme compounded selenium or zinc had good promoting effects on the production of mungbean sprouts, mainly in improving the yield of mungbean sprouts, preventing spoilage, increasing the content of soluble sugar, soluble protein and free amino acid, reducing the content of polyphenols, improving the quality and increasing the commercial value. This experiment confirmed that the treatment of mungbean seed with 200 times enzyme solution showed the best overall performance and the highest input-output ratio (1∶12.3), which was suitable for popularization and application in mungbean sprouts production. In the production of characteristic bean sprouts, the enzyme compounded with selenium or zinc could also achieve ideal results. |
